Fuding Bai Hao (White Peony) consists of one bud and two small leaves, picked in early spring in Fuding, Fujian Province, China. The small white buds are covered with very fine white hairs and end up as silver tips.

Fu Ding White Needle is also well known, but the White Needle is made only from the buds at the tip of the tea leaves. The difference is that White Peony is produced when the silver needles are at a slightly mature stage, i.e. with one bud and two leaves.

Famous white tea production areas in China include Zhenghe and Fuding, both in Fujian Province. Zhenghe White tea is mainly sold in Hong Kong and Macau, although it is also exported from China.

White Peony tastes like oak, nuts and vanilla. White Peony smells of oak, nuts and vanilla. The fruity aroma is like muskmelon, with a sweet green hue that extends from the edges to the back, creating a beautiful cup with great depth.

Use low hardness water with no chalky water (water with a water filter is not recommended as it is aired out). For a fragrant taste, brew with boiled water, for a sweeter taste, brew at 70-80°C. The water colour will be near colourless, but the flavour is extracted well. This delicate, light white tea has a very clean, fresh taste and a delicate floral aroma. The shimmering, clear extract has a delicate lingering fragrance and a fresh, mellow, sweet, herbaceous flavour that is devoid of astringency.
