TASTE
From the first attack, which is so fire-free that it could be mistaken for white tea, the tea has a mild white peony-like floral fragrance and a strong sweetness. A moderate astringency is also detected, confirming it as a oolong tea, and a slight greenish spreads to nutty and chocolaty flavours. The finish is sweet with white peach, thick and very long.

About Bai Ji Guan (白鶏冠)
The Wuyi Mountains of Fujian Province, China, are home not only to the famous Da Hong Pao, but also to other great teas such as Bai Ji Guan (White Cock’s Comb). The leaves of Bai Ji Guan are yellowish in colour. And the Wuyi soil contains large rocks from ancient volcanoes, which give the tea its unique character.
Bai Ji Guan has been famous since the early Ming dynasty (1368-1644AD), when Wuyi monks believed it was an antidote to poison and used the tea to save the lives of sick children of important officials. The tea was later presented to the emperor and became a perennial tribute. The name Bai Ji Guan literally means 'white cock’s comb', referring to the unique colour of the leaves fresh from the spring harvest. The shape and colour of the leaves are said to resemble a large cock’s comb. One of Wuyi mountain’s most unique teas, White Cock’s Comb contains a chocolate maltiness, a distinctive light Keemun black tea-like and white peach flavour, a very delicate aftertaste and a sweetness similar to British toffee.
