About Fuding Silver Needle

Baihao Yinzhen (白毫銀針), namely Silver Needle  is produced in Fuding City, China which belongs to the subtropical monsoon climate. The rainfall is abundant. It is surrounded by mountains and seas. Most of them are 500-800 meters above sea level. Fuding is also a famous tourist city with a beautiful environment. It is suitable for the growth of tea leaves and is known as the "Hometown of White Tea".

The tea tree variety is Fuding Dabaicha (also known as Fuding Pekoe). The shape is beautiful, the buds are strong, the hairs are thick and dense, and it is full of luster.

The plucking of Baihao Yinzhen is very meticulous and the requirements are extremely strict. It is stipulated not to pick on rainy days, not to pick when the dew is not dry, not to pick thin thin buds, not to pick purple buds, not to pick wind-damaged buds, not to pick buds damaged by humans, and not to pick buds damaged by insects No picking, no picking of happy buds, no picking of hollow buds, no picking of diseased buds, known as ten no picking. Only the fat single bud head is picked. If the new shoots of one bud and one or two leaves are picked back, only the bud heart is picked, which is commonly known as needle extraction.

The production process of the silver needle

  1. Screening of tea buds

Spread the picked fresh tea buds on the water sieve. Each screening is controlled at about half a caddy. It should be noted that when spreading, it should be thin and even without overlapping. Overlaps tend to darken the tea buds.

  1. Sun dry

Start drying the tea buds, and then spread them on the shelf. Do not flip the tea buds at will to avoid harming the process of the tea turning red. It should be noted that it should not be placed on the ground, which will prolong the drying time.

  1. Baking

When the tea buds are dried to 70% to 80% dry, you can start baking with a slow fire. When baking, pay attention to controlling the heat at about 40 degrees, and bake slowly for half an hour. If the heat is too high, the tea buds will turn red. Insufficient will make the tea buds lack luster.
