Zisun Tea

  Zi Sun Tea (紫笋茶) is a green tea that was mentioned in the Chinese tea scripture Tea Sutra in A.D.760, and has been revered early in China’s long history as an offering tea.
In the original Zi Sun Tea, the process of crushing the tea leaves by a craftsman is crucial. Loose tea type Zi Sun Tea therefore does not have the flavour it should. Properly processed Zi Sun Tea is quite different from ordinary Chinese green teas, such as Longjing tea, but it is characterised by a hundred-flower-like flavour that will make you fall in love with it once you try it.

This tea is circular with a diameter of 4-5 cm and weigh about 5 g.

About Zisun Tea

There is a big difference in the craftsmanship of green tea and Zi Sun Tea (紫笋茶). During the Tang and Song Dynasties, tea ordering was popular. Compared with loose tea, Zi Sun tea cake was more mainstream at that time.

According to the "Tea Classic", in the Tang Dynasty, the top-grade Zisun Tea namely purple bamboo shoots picked by tea farmers were concentrated in the tribute tea garden after going down the mountain. First use *Jinsha Spring to "cleanse and wash", and then go through 7 processes of steaming, pounding, baking, roasting, patting, piercing, and sealing, and then it is processed into cake tea.

*Jinsha Spring - a spring with a diameter of about 120 cm at the southern foot of Gusu Mountain.

Crushing is a Gong Fu job, and it must be done by manpower rather than machinery.

To achieve a state where the tea meridians are continuously broken, the machine will only chop the tea leaves.

"After the meridians are cut, the tea cakes cannot be formed, and it is not easy to form. It will dissipate as soon as it is put into the water.

Moreover, mashing can release the fruity aroma of the tea leaves, and the tea aroma is stronger.”

☆ Roast the tea leaves once to allow the water in the tea leaves to evaporate quickly so that they can be crushed by hand.
☆ When steaming, use bamboo charcoal and not wood charcoal. Charcoal gives the tea a charcoal fire, while bamboo charcoal gives the tea a faint aroma; the second is time, with buds and leaves requiring different amounts of time, and the time required for tea differs depending on the time of year. This is an important point that determines the quality of the moulding of the mochi tea and is also the most difficult to control.

Zi Sun Tea, the origin of the word "purple(紫)" generally has two meanings.

The first one is taken from the color of the official uniform worn by officials. In the past, one of the top two high-ranking officials traveled to Gu Zhushan, and they all wore purple official uniforms. The people below took the word "purple" in order to cater to the official's intention. , which means noble status, and this tea is also a precious tea as a tribute tea. Therefore, taking the word "purple" is also crowned with its invaluable name;

The second one is taken from the meaning that the new tea buds of Zisun tea are slightly purple, so the word "purple" is taken.

Zi Sun Tea, the origin of the word "Sun (笋)", generally has two meanings.

One, the shape of Zi Sun Tea, its shape is like a small bamboo shoot, so it takes the word "bamboo shoot";

The second one is taken from the mold in which the tea cake was initially made. In the beginning, the mold for making tea cakes was like bamboo shoots, so the word "bamboo shoots" was used, which has been used to this day. Later, due to the difficulty of making, the shape of the tea cake was changed from bamboo shoots to square, then plum blossom, and finally to round, but the word "bamboo shoot" remained.
